On version 3.7.1 on macOS Big Sur 11.5.2, setting the theme for Plexamp to “dark” (or anything else for that matter), only stays until the app is closed. Re-opening Plexamp sets the theme back to “light”.
Not much else to say, other than the above.
Ah, you must have Track System Theme enabled. It makes sure it’s aligned with system theme on restart, so make sure you have that disabled if you want to keep your own theme settings.
