Do you mean you want to āripā your physical CDs, to get digital files?
There are numerous programs out there which can do this. http://exactaudiocopy.de/ is one of the widely accepted free ones.
The first question you must answer to yourself is:
Do you want to keep the full CD quality
or is it acceptable to you to, to lose some of it, in exchange for smaller storage space requirements?
If you want the full quality, pick FLAC as the storage format.
I have seen on the internet a few different configuration setting for EAC to rip CDs but I donāt want to get this wrong as I start to prepare quality flac files for my Plex server.
Can someone point me to the best configuration options to be used with EAC for Plex?
If your devices/clients have issues with it - convert it to something else (youāll never hear the difference anyway - most likely):

If you have music, you may want to try an MP3 file. Your future Plex career might not be infused with Emby/VLC/Other while you settle on a format thatāll actually produce sound.
You might want to add a good metadata editor to your software arsenal. The tags that get applied automatically in EAC are not always great for Plex use.
I recommend mp3tag for Windows use.
