Please can PLEX disclose all information that they are collecting from my server?
How can I disable parts of this information being collected, or is that not possible?
Can I have an update from Plex on what exactly they are collecting from my server?

Also under Setting -> Server -> General uncheck Send anonymous usage data to Plex

Have you read through the Privacy Policy that I linked previously?
If after reading through it you still have questions, there is a link at the bottom to request further info

Yes, I did read it, and would like Plex to provide this info in the forums, with a lot more granularity than in the privacy policy that they have issued, so that everyone who has a Plex Server can see what exactly is being collected.
I’m thankful for Plex’s attention to my details. I don’t have any friends and currently Plex is the ONLY thing that seems to care about me.
It’s good to be ‘loved’ by something (at least).

After forwarding your comments to the DEV Team I have been told that there is work being done to update/improve the Privacy Policy, and in addition to that you can use the following URL to see what info Plex sees about your server:
