I have a very simple sync scenario but it just doesn’t work the way I would expect it to.
I sync a few shows to my phone when I travel to watch on the plane. After I return to my house where my PMS is, these shows never get marked as watched nor removed from my phone.
Now i do not use the season pass or “sync up to 5 shows or sync unwatched” etc. and maybe thats the issue? All I do is manually select a few shows. tell it to sync and move on.
Anyone know what I’m doing wrong as far as my PMS never knowing that ive actually watched these shows?

The reason they are not getting removed is because you are manually selecting shows, and not using a sync rule that would trigger them being removed.
As far as watched status, are you allowing your phone to sync once you get back to your house? Plex running and open? Any errors when you try to sync post-watch?

OK good to know about them staying on the phone. I can easily delete them manually. As far as watch status I am absolutely reconnecting the phone to the network and opening the phones Plex app. You say “try to sync post-watch”? Is there something I need to manually be doing once I get back home? I assumed that that part would be an automatic thing once the phone was back on the same network as my PMS? No errors that I can see just that PMS never recognizes that these shows have been watched. I always have to go into the web interface when I get home and mark what ive watched, “watched”.
The phone is signed into the same account on both devices (phone and Plex/web)?

Yes. I have a very simple setup with only one user/account.
open up the sync window on phone and initiate a sync and it will send watch state to server. no new files will actually transfer unless you have some sync rule set up like every 5 last unwatched episodes.

Will do @BigWheel . Do you know if this is the expected procedure or just a fix?
i’m not sure if it is expected. I thought it will sync up after a certain amount of time when it comes back online but I am not a regular iOS user myself. hitting the sync button forces it.
i imagine there had to be consideration when people come back online remotely on wifi that may be slow so they can see sever do not want any sync processes happening.
if not a bug I will make a feature request that it do so.
