Anytime I try to remove users who no longer use my server, I get an error: " There was a problem removing this friend." On top of that, if I try to un-share libraries one by one, I get a similar error. Seems I’m not even able to cancel a pending invite to re-send: " There was a problem canceling this invite."
Any suggestions?

I am getting the same issue on certain users. Have you found a workaround?
First change what you are sharing , if only sharing individual folders, change it to “All Libraries” (if sharing “All Libraries” already then select only one) , then save, After that, remove the “All Libraries” check mark, so that no libraries are shared, save, and then you should be able to remove the user, it worked on home user and sharing with section., I hope this works for you, also I did a repair install of the server before I did this - it still did not let me remove anyone after, but was I able to edit what i shared and after that i was able to remove the users.

Sooo…anyone have any ghosts haunting their Plex servers?? I do.
I added a friend to my Plex server many moons ago on the Nvidia Shield TV. I have since switched to a completely new server (via a docker container) and yet, this user shows up in my stats/dashboard.
I just double checked to make sure that they are removed from the server and I can confirm that is the case. I also checked some of the content I was sharing (Content Title > Edit > Sharing > Labels) and nothing there either.
Like I said, this is a new Plex server build so I don’t understand why I am seeing this user under the dashboard stats.
I also checked Authorized Devices and nothing is listed other than the devices that I currently use.
Somehow, somewhere, this username that is showing up is synced to the cloud/my account — and I am the primary account holder.
