Plex doesn’t currently support customizing the skip duration(s). There’s a feature suggestion thread discussing such an option where you can vote for the feature.

This post started out in Plex For Android , then I put it in Plex Ninjas , and then it was suggested I post here as an idea for any/all apps. Basically, I’m getting a little disappointed with Plex’s changes to the skipback duration in the Android app - it was recent shortened from 15 seconds down to 10 seconds, which is shorter than I’d like.
