Completely remove ALL metadata from videos

No, I only want to know if there is more than one file for any episode at the same time in Plex.

No, there isn’t. Shouldn’t encoding a video remove all metadata anyway?

If you do it with Handbrake, you get a bunch of new, sometimes completely wrong/irrelevant, metadata out of it.

I did it with Handbrake, are there certain settings that I have had to change first before encoding?

No. Unfortunately, Handbrake doesn’t allow you to configure this.
It will always add these meta tags.
Which is why I made it a habit to always either remux the output of Handbrake again or at least use my script to remove the global tags.

So if I understand correctly, we are out of ideas?

Unfortunately yes.
All of the above is working here on my machine (but it’s not a Terramaster NAS).

Ok, @OttoKerner I honsetly appreciate your help. I’m just going to remove the local media assets from the server agent settings.

Thank you so much!
