I would like to customize some libraries by changing their icons and renaming their category
What exactly do you mean by “category”?
The title/name of a library can be freely changed. (except on the WD MyCloud Home NAS devices, where they are pre-defined/fixed due to WD policy)
As for the custom icon, this has been requested already: Allow libraries to have custom icons
This is what I call category for example I have French music and English music
And I would like it not to be together in the top user

Once you click on the category, you can set a name for that library.
The “category” is just the type of media that library will contain (e.g. movies, music, tv-shows…). You can have many music libraries, each with a different name (e.g. “French Music” and “English Music” – or “Music” and “Soundtracks”…).
The icons for the libraries cannot currently be customized. I suggest you vote in the existing feature suggestion linked above by Otto.
Given some users have dozens of libraries per type, the dashboard is grouping them. If you want a more detailed insight you can click on View Full History in the Play History section. If you need different view, you might want to look into some of the available 3rd party dashboard apps like Tautulli.
But it’s really a pity that plex combines the categories
Would you mind sharing what you feel is missing by having the libraries grouped by media type in the dashboard?
I realize this is a few months old, but I just happened across it.
I wonder if you’re talking about this screen:
If you add the paths to both your French music and English music in a single library, then yes, Plex will include them all in the same library.
If you create two libraries, one pointing to your French music and the other to your English music, you can name each library differently, and they will appear as two libraries in Plex. I have my music separated into ‘Classical’ and ‘Popular’ libraries:
