Difficulty watching Plex since Oct 1st

Player Version#: I use various different players, one on Roku, AppleTV, and an old Plex Home Theater.
Recently, I was unable to use Plex Home Theater, OpenPHT, and Plex Media Player to play movies on Plex. After considerable searching and learning where to find Plex logs and enabling debug logging, I found messages saying “sslv3 alert error certificate expired”.
Sadly, I am the furthest thing from a cryptography expert.
For a temporary solution, I changed Secure Connections from Preferred to Disabled and this allows my Windows clients to connect; however, now I have a problem with my AppleTV and Roku connections and the behavior is different.
On AppleTV, if I log in as a “teen” account where I’ve blocked R-rated content, all I see under Plex is Movies & Shows on Plex. But, in “More”, I can see my server under my admin user account and can watch the restricted movies. I don’t really want my 9-year-old stumbling on the more mature content. It’s the one and only reason I bought the Plex Pass.
On Roku, all I can access under any account except Admin is Movies & Shows on Plex and can’t see any of my own libraries.
Probably needless to say, but I’ve been a very frustrated user this week.
I’d prefer to make a self-signed certificate that is not expired and is acceptable and then overwrite the existing expired certificate, but I don’t know where it is or how to generate one or even if a self-signed certificate would work.
