According to the documentation, if multiple episodes are in a single file, you can name indicate that by naming the file as follows:
/TV Shows/ShowName/Season 02/ShowName – s02e17-e18 – Optional_Info.ext
However, the description goes on to recommend using a tool to split the file because:
Note : Multi-episode files will show up individually in Plex apps when viewing your library, but playing any of the represented episodes will play the full file. If you want episodes to behave truly independently, you’re best off using a tool to split the file into individual episodes.
I’d like to suggest that fields to include start/end times are included. This would allow you to define the starting and ending time within the file for each episode. Multiple episodes could be defined and as you add the start/end time a new field appears to add additional start/end time. For instance:
Filename: MyShow.mkv is 1 hours long and contains four 30 min segments:
Name:s01e01
Start: 00:00:00
End: 00:29:30
Name:s01e02
Start: 00:30:00
End: 01:00:00
If you have only one episode within a file, this is still a useful and powerful feature and it can be used to indicate the particular segment within the file, such as your favorite scene. Multiple can be added and these will be listed along with the film

Start: 01:57:03
End: 1:57:44
You can also use it to define a start/end time for the entire film. Either, or both can be defined to get the desired results.
For instance, if you wish to completely skip the Overture of a movie. This will start 14 min 15 sec into the film and play to the end.
Start: 00:14:15
or add just the end to stop playback early. This will start at the beginning but end 1 hour 58 min from the start:
End: 01:58:00
