Love the bad-word filters. 
I have a similar frustration to you, and have proposed what I believe would be a simpler to implement solution. I’d be grateful if you took a look and let me know what you think.
Give Option to Play Default or First Audio Track

I ran into this recently. I modify every MKV file so my preferred tracks are marked as “Default”, but it’s annoying to have to remember to change tracks in Plex just to watch something because it’s not choosing the correct one.
Audio
It’s showing up for me when I have a movie in a foreign language with an English commentary track. It will choose the commentary track because it’s in English.
Same with old movies, they play from the commentary track.
But those are easy fixes and movies are ~2 hours, so it’s not as big of a deal.
Subtitles
Where it affects me most is with Anime. It’s choosing the second subtitle track (signs and songs), but different shows have the preferred subtitle track in a different spot. It’s even different per video sometimes. I move these to the first track set as Default, but Plex selects the second anyway.
Unlike movies, fixing this in shows requires fixing it one-by-one literally hundreds of times. It’s so annoying!
