The latest shield update using the new player on plex beta has a very weird distracting gray haze when i bring up the new player UI to see play, pause, chapters, ect…
Can it go back the way it was?

I was also a bit surprised to see it back again.
I remember it turned to grey awhile ago but got changed back to black and possibly more transparent due to user feedback.
But seems to be back to grey again.
Personally I prefer the black.

Same here. It’s really ugly now. 
It looks washed out in my opinion.
Thank you for the feedback, it’s appreciated, and has been fed back to the designers. Aside from the colour change, do you like the new, smaller, layout of controls and metadata?

I am not overly picky it all looks good and professional to me, you will likely get some people who will nit pick to death.
Just the washed out grey is my only complaint.

Thank you for changing it in the latest beta. It is much less intrusive now and I enjoy it much more.
Re the quality / subtitle selector, I appreciate the transparency but wish it looked a little less mobile like? I guess I would like it to remind me less of a phone UI.
That will be refined over time
