So I just checked my sharing list and I found like 4 accounts shared to my server that I did not add. Is there a way to see logs of who and when accounts were shared to my server?

You should immediately change the password for your email account.
Verify that your Plex account has still the right email address.

And of course change also your password for Plex.
And don’t use a password you have previously used, no matter where.
Very important: sign out all other devices and services during the procedure.
You will have to re-authenticate all Plex clients afterwards, but only this makes your account reasonably safe from this happening again.
