Hardware accelerated streaming - Quick Sync and NVENC

Hi everyone,
I have an older Quick Sync CPU that does not support decoding stuff like HEVC, h265. According to https://support.plex.tv/articles/115002178853-using-hardware-accelerated-streaming/ , Quick Sync is preferred before NVENC.

However, if I plop in a compatible NVENC GPU, say a 1050/Ti, will Plex skip trying Quick Sync for unsupported formats and go right to the first option that works?

Also, when popping in a GPU to the headless server, will it work for hardware transcoding or do I need to fake a monitor being connected?
