How do I force plex to transcode x265?

It seems that plex is unable to play x265 smoothly on my apple TV even though the same content plays smoothly on infuse or emby. I tried both the old and the new plex players.

When I play the video in plex, if I manually turn on server side transcoding everything is great.
So, my question is how can I automatically make plex transcode all x265 content so I don’t have to manually do it every time I play a video?
