Right click on Plex Media Server. At the bottom you will see Compress. It will compress Plex Media Server and create Plex Media Server.zip

When I go Extract to my new location (after moving the zip file to my new Directory on the new Volume), I right-click and choose Extract Here:

Now Iām confused. Iām not sure where you are extracting. Rather than giving me screenshots, can you type out the pathnames? This will avoid all ambiguity.
Before we proceed, What did you call the new directory / share on your SSD? What is its full pathname?

I called the new share Plex2. So full pathname is /share/CACHEDEV2_DATA/Plex2.
So having made a zip file of PMS from /share/CACHEDEV1_DATA/Plex, I moved the zip file to the new share folder Plex2.

You moved that ZIP file to /share/CACHDEV2_DATA/Plex2
If this is correct, from FileStation, in the Plex2 share, Unzip here
If this is not correct, navigate to the Plex2 share and then Unzip here
When finished, Take a screen capture of the top level of the Plex2 share. This will confirm before the the final steps

Can I humbly suggest using rsync instead using the build-in backup station?
That way, uptime of PMS is higher, and can work in the background while PMS is online, and when done, shut down PMS, run again, and then make the redirection!
And added benifite is, that it can be stopped/paused and resumed at any time

So how exactly should I use RSync in Backup Station in this case? Iāve currently got Plex Media Server folder copied on the Plex2 share on my SSD Volume.
If itās already copied over, then no needā¦
It was to simplify the copy process with a minimum downtime
Followup question:
QNAP have made a feature to migrate appdata to other volumes from the default installed path. That way its easier to move Plex to an SSD drive instead of making symlinks.
Would you please look in to the feature introduced in QTS 4.3?
I had a chat with my colleague specifically about this. Engineering is already working on upgrading the SDK we use for 4.3 to support a number of things such as migration.
And when said, a living hell, if having a huge library, since then, PMS will be offline for a huge amount of time, so indeed not an easy taskā¦
As an alternative, the library is kept outside Plex storage, but sadly, no way of injecting into the QNAP qpkg rutine, to popup and ask for a path 
When will the migrate function be supported by Plex?

I have Plex on /share/CACHEDEV1_DATA/.qpkg/PlexMediaServer
And already have it on an SSD at /share/CACHEDEV5_DATA/PlexMediaServer which I was using .
I did a firmware update and 25TB of media was moved from my 2 main folders into lost+found folder.
Itās a nightmare getting the data back but that is another story.
During this mess up my plex symlink went missing (or I deleted it accidently) now I just cannot get it working.
I did this previously but cannot remember or find where I found the info last time!
So where exactly do I put the symlink that points plex to the SSD install ?

I had the same type issue. I found that R/W cache on the main array during firmware update to be the cause.
Which location is current data?

SSD is where it is now and the one I want to use - /share/CACHEDEV5_DATA/PlexMediaServer
