How to convert videos from Canon camera with handbrake?

Hello everyone,

I have a lot of videos I made with my CANON GX MII I would like to import in Plex.

In another post Otto advisded me to use handbrake to convert my videos before to play them with Plex

I also have videos made with my phone.

I was wondering if some of you can share the settings you use in handbrake or their experience of the conversion.

Since it can take a long time and I will have to keep the original files for backup I would like to do my best to make it the proper way.
