If you know python but are a little confused with creating the site config for files have a look here:

This might be a stupid question, but what are the site config files supposed to be called. I have the folder but no files inside it. If I were to make one, what would I call it?
Are you sure you are looking in the right place?
[HOME]/Library/Application Support/Plex Media Server/Plug-ins/SiteConfigurations.bundle/Contents/Resources
That’s where the site config files should be, and there should definetaley be a few of them. You can call your file pretty much anything you want, as far as I know.
Aha! NOW I get it! I was looking in the Site Configurations folder. Didn’t see the bundle.

The ones in the bundle are for the sites “officially” supported by App Store plug-ins - they’re managed by the store, and auto-updated as necessary. The folder is for you to put config files for extra sites in. Don’t copy them directly into SiteConfigurations.bundle - the App Store will eventually detect the untracked files in the bundle and remove them.
You can call the files anything you like, as long as they have the .xml extension 
Cool! Now all I need is some spare time. And that’s the most difficult part of the whole thing…
