Go to Plex.tv, sign into your account.
Under ‘My Account’, at the very bottom of the ‘Account’ tab, in RED, you will see where you can delete your account.

When I go to “My Account” I don’t see the note about the privacy policy, or the link to my privacy preferences page. How do I access my privacy preferences page?
Click it. There is a single checkbox (in a blue region).

“If you proceed, this will permanently delete your account and all its data.” Typical Plex obfuscation, somehow I doubt “all data” is really everything you have every tracked about me. I doubt this is legal in Canada, but lack the time, money, or fucks to bother.
Off to greener pastures, where “my media, my way” still seems to be a priority.
Holy crap! We still do get occasional responses from the Plex Team. There seems to be still life on the other side …

I think your entire account is deleted. I have known of users who deleted their accounts “by accident” (not possible) and they were not recoverable . The billing office, in conjunction with the user supplying C/C info, was able to re-attach their Plex Pass eventually.
To be clear about where/ how to change your privacy and other account settings or delete your Plex account.
