I have just installed Plex and connected it to my TV. It works fine in that regard however I don’t see any options to watch Twitch.
Is something like that even possible?

Well that’s unfortunate…
I genuinely need Plex just for that and to avoid purchasing needles Tv boxes.
If you ever decide to implement it you will get one lifetime purchase from me.
