Plex went crazy with trying to organize all of my media files, and now everything is disorganized.
I am reinstalling, and does anyone how to STOP Plex from automatically trying to organize and add meta details to the files I am adding to the library? I don’t want plex to do ANY look ups and only simply adding the folder structures to the program ?

Plex does not organise your media files, your personal files are not tagged or reorganized. Take a beat and read through some of the articles in the support link shared above to get a better understanding if how Plex works.

Folder and library aren’t interchangeable. Folder is the location of your personal media files. Please just take a beat and read through the links.
how do I start over entirely and remove all of the existing matches, and start fresh, telling Plex not to attempt to match anything?
Good question, i think I understand what you’re trying to do. The easy way is to delete existing library:
Set up new library of “other videos”
That library does not use any fancy agents to match you media. As your media is on your drive, so it is pulled through on Plex, assuming your media is all videos and you don’t need to disaggregated between TV, movies etc.
If you’re truly sold on your folder arrangement, you can choose what view from your library as well.
