The Plex support indicated that I was to go to Plex Media Server under the Software section of the registry. There is no Plex entry under Software. How do I find it? A simply Find in the registry does not locate it either.
If your Plex server is running directly on your QNAP NAS device, there is no Windows and there is no Registry.

Which one do you want to re-claim?
If you want to reclaim the one on the NUC, then indeed you need to access its registry.

Okay, will do right now.
Okay, I found question 32 and began to follow it until I came to the Claimed - 1 entry. It directed me go back to the windows registry page that was giving me the trouble in the first place. I think I must doing things wrong.

Are you perhaps using the wrong IP address? You need to use the one which is assigned to your NAS, not the one that your NUC has.
This is what the question said:

I restarted plex and it still showed “1” next to claim. The “here” link took me to this page:
The second article has different instructions, depending on where Plex server is running.
QNAP NAS devices don’t use Windows, therefore you must not follow the instructions for Windows.
QNAP use an adapted form of Linux. It uses the Preferences.xml file instead of the registry.

Oh, okay, i think i understand. I need to edit the preferences file using notepad++ and follow the instructions under claiming via 3rd party. Although I’ve never used SSH before.
So, I went through the steps and this is what it gave me:
