Ok, I’ve managed to fix the issue. Unlike on Windows (which I used to use) iTunes on macOS uses a relative path to Users directory, rather than the drive root, in it’s iTunes Library.xml file by default.
Default iTunes Location Key Formats

The Plex Music Library Folder must match the initial path before the iTunes Media Folder.
So by default on macOS this would be /Users/username/Music/iTunes.

On a sidenote, it would have been great if
- a more useful error messages were given in the UI such as
iTunes Playlist Import failed: iTunes files could not be located. Check the Library path matches that in iTunes Library.xml
- the onboarding process was easier. Again the UI isn’t very iniuitive in this regard.
- there was better documentation regarding importing iTunes playlists. This article fails to mention this specific requirement regarding the path for iTunes.
