I have about ~1200 pictures organized on my phone, depending on the event/vacation/etc., in folders. Is there a way I can sync this folder hierarchy to my Plex Server? When I try to use Camera Upload, it just syncs single pictures. If I did it that way, I would have to select and move each individual picture into the correct folder on the server.
I am running server Version 1.7.1.3856 along with a Galaxy S7 with Nougat.

Try legacy mode 
USB Cable from your phone to your computer, copy the entire folder structure into your plex pictures directory and the server will scan and add them to your library. When viewing photos from your phone, select “Browse” instead of “Discover” and all the media is sorted by folder, just try to keep the folder names short if possible, long ones seem to get chopped off a bit.
