Pretty self explanatory - is there a way that I can quickly lock every field down on a season of a TV series - or even the series itself - rather than going through every single episode and clicking lock on every single field?

Yes, via multi-select. In your library, drill down to the season in question so that you can see all of its episodes. Hover over the first episode’s poster and click the empty circle at the top-left. Then do the same for the last episode, this time holding shift while clicking it. This should select all episodes.
Then, click the edit (pencil) button at the top-middle’ish of the screen:
You can then lock any fields in the general and tags tabs.
This will allow you to lock every episode-specific field with the exception of its poster and background.
You can do the same thing for an entire series if you set it to not display seasons (temporarily if you like).
