looking for advice on which clients to use with cording cutting and Plex as my focal point

I have only been running my Plex server for a few months and want to expand what I can do with it and shave the cord a little as I go and need some advice on next steps with set up and equipment. I have been leaning this way for some time now and now that Brighthouse has become Spectrum in our area I am ready to move forward.

What I have so far
Server is Windows 10 based on an I7 6700 machine and 32GB ram, OS is on an SSD and Storage is on 3TB mechanical drives.
Internet is now ATT GigaPower, 1GB up and down, this was installed yesterday and was previously Spectrum 100/10.
Client are Roku Stick, Amazon Stick, along with kids kindles and Iphones.

As we start to cut back on cable I can drop the Spectrum package we have now. Our HOA provides basic digital which is about 90 channels and internet which I can use as a back for work if ATT goes down. We already have Nextflix and Prime and will pick up another service if need be??

What I need advice with is a client I can use on our Main TV that is robust and gives me some options to stream sports from the Web. I was leaning towards a NUC but then someone suggested Nvidia Shield along with HDHomerun to DVR shows… I want to have something that is easy to use for the family but gives me enough flexibility later if needed.

thoughts and or suggestions.

I have 4 NUCs and 2 shields.
The i7 NUC is my Plex Server. The others are connected to Tv’s (as are the Shields).
You can get remotes and wireless keyboards for the nuc connected to your TV but they fail badly for convenience and use.

Short answer I use the Shield 90% of the time.
For the price of one NUC you can buy 2 Shields or a Shield and 2 Rokus.

And something that doesn’y get mentioned much. The Shields have chromecast built in. That means u can cast media from your Android or apple phones and tablets!

Thanks Spikenmixture, the more I read the more I like the Shield mainly it’s just easier for everyone to use. I have used an HTPC with a keyboard mouse combo in the past but with younger kids I was looking for something easier.

Looks like I will pick one up this week.

I use a 4 receiver TABLO system for all my over the air PVR activities. The Tablo can store all received TV broadcasts in your area onto a USB external hard drive. I can then watch the programs directly on the Tablo page or offload the files using TabloRipper to make MP4 files.(with commercials). Once the MP4’s are massaged (I remove commercials) I dump them where Plex catalogs them and makes them available to my smart TV. Works like a charm here.
