First time posting, so forgive any ignorance on my part for this post. I’ll provide as much description as I can initially, and will gladly provide additional details upon request. I’ll summarize the post with questions and system details at the end.
I am running Plex in a docker container (using kitematic and the plexinc official pms-docker pre-built container) on Ubuntu 16.04. I initially setup Plex (without docker) on Ubuntu 18.04, but ran into some issues. So I did a fresh install of 16.04 and started using the docker container as counter measures to the issues I experienced the first time and the server has run beautifully ever since, with one tiny exception. Due to the nature of docker containers and the pre-built container I chose, I cannot update to the latest version. I’d like to setup a new container, but I’m concerned about losing the media metadata customization I’ve added through Plex’s interface. Once I am able to answer the questions below I’ll rebuild the container and then upgrade my OS back to 18.04.

Is there a good program (and stepXstep guide) I can use to modify the file metadata after they’ve already been created? (This is my preferred method of handling the situation so that I can clean up episode names, etc. Going forward I will modify the info in Handbrake when I create the .mp4, but I’d already ripped 3+ boxes full of media before I figured out I should do that.)

Is there a way to backup, export and later import the Plex metadata for when I rebuild the container?
