Yesterday I updated my PMS on Ubuntu to version 1.29.0.6140. However, there’s no changelog on the forum or a post about it. Just wanted to raise awareness, that it’s still missing.

I suspect this release got pulled. I too got a notification for a server update but later when I went to do the update it was gone. Version Version 1.28.2.6151 is the current beta version I have installed and its reported as up to date.
If I was you I’d stay on the version you have unless you run into problems. When a later version comes in the not to distant future plex should then just update to it.
You can of course downgrade but to be honest I never do that myself. Should be fine but I just don’t trust downgrades
I also jumped on the update right away, not noticing that the build number was actually lower than the previous (now again current) release. If you’re interested, here’s the changelog for the pulled update:
