You can move some of the underlying information (e.g. the server’s data directory). However there’s no means to automatically transfer the information from your Mac’s ~/Library/Preferences/com.plexapp.plexmediaserver.plist to your Windows Registry.
The related support article only describes moving a server installation within the same platform type (e.g. Windows->Windows, Mac->Mac…). Although you should be able to follow the basic procedures and then manually “reclaim” your new installation.
Agreed about server settings. It’s simplest to reconfigure those manually.
Watch status and viewing history are stored in the database, so if the server’s data directory is migrated, that will come over.
If you only care about viewstate, an alternative is to do a clean install on the new system and then transfer just the viewstate.
