I am new to Plex...looking for an alternative to using an XBox 360 as a Windows Media Center extender. I am only looking for music files, but when I open Plex on my XBox One, it recognizes the Plex server, but won't open. Am I correct to assume that music files and channels are not yet supported on XBox One?
You are correct, Music libraries and Channels have not been added to the Xbox One client yet. The dev's have stated they are working on it, but not given any time frame.
Would really love to see Music and Photo's on XBOX ONE App!! Any further ETA for these improvements?

Plex doesn't release time tables or roadmaps, so all we know is it is coming.
Music is yet another missing Xbox One feature I am holding out for.
It is also missing other important media features such as channels, search, sorting and filters.
Xbox 360 has all these extra features that are missing in XBone. Why is Xbox One being neglected?
It is a little unfair, as the Xbox One is so much better as an entertainment system interface, why would I want to use the old 360.
well we have to pay for plex pass and we cannot have full access to plex while other have plex for free get your priorities straightened out or i could just stop my subscription

The xbox 360 client was in development for a longer period of time, which means that it had more time to get all the features added and working.

The Xbox clients are still in a early access/preview stage meaning they are not full fledged clients. A Plex pass is for early access to new clients that arn't ready to be released as completed clients yet.
then why do we have to pay to use the xbox one then if its not even ready

Then don't pay for it, wait until it's released and you can pay the one time fee to buy it....

Because that is one of the features of the Plex Pass: Early access to new features and preview clients.
Once the client is finished it will move (more than likely) to the same setup as other Plex Apps.
