I join the thread because the same thing happens to me. I have test users that I did thinking that I could delete later but apparently they appear forever and prevent putting the same username to another user despite having been deleted.
I want to keep this thread alive as I strongly agree with RubberDoggy’s post on Mar 22. This has nothing to do with “stats” and has everything to do with control. I have users in my history for email invites that I mistyped their email address! They have no history and I cannot remove them.
There is no government oversight for my PMS play history (in response to the pharmaceutical company argument); I should get to decide what stats are useful for MY oversight.
I would also like to remove past users from my list.

Unfortunately, I haven’t found anything to edit/delete the history/statistics from PMS. I also haven’t found anything useful in the available API documentation (which should also cover functionality not available in the UI)
But, to be honest, I have no clue if this information is stored on my server or on Plex’ server(s). Would it be the latter case, which I would regard as pretty concerning (from a privacy point of view), but I would also get the lack of this functionality (from a company point of view, messing with chronologically accurate metadata would be highly discouraged)
The statistics are solely stored on your own server. If you delete its data folder and/or its primary database file, the statistics are gone.
@OttoKerner, You brought (me at least) some ease of mind. It’s great to know this data only resides on my server…
Taking your information to heart, the primary database file will (partly) contain the history/statistics, so it might be possible to edit the entries. I’ll try to throw a little sqlite at the database to see what comes out 
I know this is a little off topic…
But I would like to see the ability to exclude Admin…
I as Admin sometimes Play parts of the same movie/TV show multiple times for various reasons, those should not be included in the stats…
