I have one movie that is always at the front of the recent movies list, no matter how many I add. I’m not sure how to edit the metadata for this film so that it’s no longer the first one. I am fairly certain the “Date Added” must be in the future. Is there a way to edit that value?

Look at the date/time stamp of the file and the directory it’s in.
obviously , next check system date & time.
After you removed it, did you “Scan Files, Empty Trash, and Clean Bundles” ?
PMS will remember the file until you do
Thanks Chuck, I was able to change the modified date (which was 01-01-2098) from my Mac and it appears to have fixed it. Thank you!
So the date was fubar on the MacOS side? 
No, the file date was fubar on the Synology side, but I don’t know how to change the modified date on the Synology, and I can connect directly to it with my Mac, so was able to change that date using the Mac’s terminal.
