I’m happy with the quality of the optimized versions and they don’t take up that much space. But when i go to delete the original version it also deletes the optimized one. Is there any way to only delete the original one?

Plex doesn’t support that. The optimized version “belongs” to the main item in your library – by deleting that, Plex will also “clean-up” its related media (incl. the optimized versions).
I’ve seen users copying the optimize files, re-adding them as a different version of the item.
There’s a feature suggestion asking for an option to keep only the optimized version and allowing to delete the original one.
