I absolutely love Plex. I use it almost every day. I always just use Folder view because I like to organize my media my own way. However, it always looks so… soulless. Blank folder icons. Blank backgrounds.
Therefore, I wish we could assign icons/posters/backgrounds to folders! It’d spruce up the UI and make it fun to navigate. To be honest, I’d buy a lifetime Plex Pass just to do this! Please consider adding this feature.

There’s an existing feature suggestion for this. It’s very old, and not very popular. I’d suggest voting and commenting there.
On second thought, what I’d really suggest is working within Plex’s primary view framework and using collections to organize your media in a manner which makes sense to you.
Oh, Collections actually seems pretty close to what I want! Is there anyway to make Collection Folders, or Collections of Collections?
I wish I had better news here. Nested collections is another languishing feature suggestion (I’d personally like to see that one). I’m pretty sure that collections based on folders has been suggested as well, but I’m having trouble finding it at the moment.
But collections in their current form cure a lot of library viewing ills, in my opinion. Smart collections in particular provide a great way to automate the creation of collections based on title, director, studio, genre, etc., and can be very useful in creating a library view which is palatable to different users.
