ok, mean time band aid…
how do I put a restart in the jail for every morning. Not the best fix but it will work for now.

I would not move to TrueNAS Scale, personally. Still in Beta to my knowledge, I would definitely let them work out the kinks first…
Also seems like you could uncheck certain “daily” operations from the Scheduled Tasks and see if the crash continues to happen. Then slowly re-enable one-by-one till you can re-produce the crash.
To answer your question about rebooting the jail… I think you can probably schedule a cron task in the TrueNAS GUI to restart your jail with an iocage restart [jail_name]. There might be a better way, but that is the first that comes to mind.
These were the last logged scheduled tasks before the crash on the 16th
Dec 16, 2021 03:10:02.574 [0x807202400] DEBUG - Butler: Scheduling deep analysis for: The Slabside Redemption
Dec 16, 2021 03:10:02.718 [0x807202400] DEBUG - Butler: Scheduling intro marker creation for: 596
Dec 16, 2021 03:10:30.789 [0x80932b000] DEBUG - Butler: Starting delayed task RefreshEpgGuides.
So we have Intro Detection and DVR EPG Refresh implicated
so no idea what these are related to…
so the cron job to restart the Plex stack is working…
band aid fix, but ah well,
