I would like to watch plex but everything comes in Spanish. I need English. My TV settings are in English. How do I change Pkex to English please?.

The content provided as online media sources is based on geography. I’m located in Germany and can’t see all the movies/shows offered in the USA or other regions.
That could mean, the content in your region (Panama) is also different — including the language tracks provided by the licensing partners / distributors.
