The current version still runs under Rosetta. Are there any plans for a transition to the M1 chip?

There’s a big thread discussing this and there’s even a feature suggestion. IIRC Plex have commented they’re working on it but have dependencies to some 3rd party libraries which aren’t available for the M1 yet. No ETA as Plex usually doesn’t comment on their specific timelines (or roadmap in general).
