Plex media server local streaming setup

I have used Plex media server on my desktop and the Plex app on my Android phone to cast Video to my living room TV for a long time now.

Every now and then (And especially a ton the last few months which is why I’m here) videos barely play, if at all when I cast them. They might load, they might not… Sometimes they play for 2min then stop and buffer repeatedly.
My hard wired desktop computer which has the server and video files on it as approx 50Mbps DL and 5Mbps upload. My Chromecast location has a solid connection speed as well.
I feel like I have some settings in server that night be throwing things off or causing the issues. Any thoughts on an ideal setup? Or best way to reset everything to defaults so I can have a seamless casting experience again?
