How does plex remote access work? Like ports, access, security, encryption, and so on?
I am curious on how safe it is to use. Is it something I am better leaving off or using in a DMZ?

Avoid DMZ by all means. It creates an open (and unsecured) door to your server.

I was thinking of creating a back up plex server for a DMZ so it has only shows and movies on it with 0 personal data and prevents access to my network.
also what TLS version? Not all TLS is secure anymore. Also how is it implemented?
My suggestion would be to publish your server externally on a port high up in the 50 000 (avoid the 32400) and ensure that only email is a viable login method for the owner account.

thansk that was really helpful but any idea on what version it is though? Just curious
I use my plex behind a reverse proxy for webui, then normal for the rest with IDS/IPS infront.
