Plex server stops but doesn't crash Windows Server 2016

I built a server box a few months ago and transferred everything that was once running on my Windows 10 desktop to this box using Windows Server 2016. Everything installed no problem and the server was running without issue. Over the last few weeks to maybe a month ago the server has randomly stopped working. The program is still running in the task manager but it can’t be accessed via browser and the only thing that fixes it is force closing it in the task manager and starting it again. It seems to do it regardless of the number of users I have connected. I do a lot of transcoding to keep my upload bandwidth reasonable to my friends and family (since they don’t care about quality) but like I said it happens even when there is only one or two connections but I’ve seen it run fine with 10-12 connections with transcodes no problem. I have a core i5 7600 and 16GB of RAM with hardware transcoding turned on.

I use Tautulli to monitor whether the server is running or not but because it doesn’t actually stop running I guess it doesn’t count as the server going down to Tautulli as I never get an alert and if I check the main Tautulli page it just says there was an error connecting to the server but never actually sends me an alert the server is down. Any help with the attached logs would be greatly appreciated as I just can’t seem to figure this one out.

I’ve been experiencing similar with my Plex (on OS X). It either crashes (which I have a launchd script to restart it) or it hangs. I’m running the most recent version of Plex and I updated to Mojave (as I thought maybe it was happening because of High Sierra).

It’s becoming a pretty large blocker for me to actually pay for Plex Pass. My wife and I both want to use it from work, but when it crashes every hour (I can’t get through a single episode of Mr. Robot without it crashing 2 or more times), it brings into question whether or not I want to spend money every month on it.
