I tied to open plex with the Amazon fire stick and it tells me plex is unable to start due to an error

And? So? Therefore?

In order to get much help details of your setup and log files will probably be needed but the first step I might try is to remove the app from the Stick, restart your Plex server and the reinstall the app. Then, if it does not work, we can proceed from there

Uninstall the app, reboot, then re-install it.
