I have had my unraid setup with my plex server up and running for near 2 years now without much of a hickup.
As of this last week though, the server has been crashing every day, multiple times per day.
I can simply restart the docker and all is well, for a short time.
I cant seem to track down what the cause of this is and Im hoping for some help.
Im running Unraid 6.5.0 and PMS Version 1.12.1.4885
When this originally started happening I was running the Binhex-Plexpass docker, but I have now moved over to the official docker from Plex Inc. This did not resolve the issue unfortunately.
Any help would be greatly appreciated.

Seems the issue was based on UnRaid 6.5.0.
I read elsewhere that their were some linux based issues with this version that caused PMS to crash.
After I updated to UnRaid 6.5.1 RC5 the issue is no longer present.

You did not say what time each crash occurred
From the logs I can see that
On 9th April PMS was shut down at 16:35:50
It was relaunched at 16:35:54 and shutdown at 17:02:57

The shutdown in both cases was a Signal 15
