For some reason, I am unable to get any sort of consistency running plex inside of docker. I was getting consistent performance until moving inside a container (actually inside kubernetes). The media is stored in an NFS mount, which had no issues running 10+ simultaneous playbacks and appears to have no bottlenecks. I have attached logs which was approximately 10 minutes of activity with only 2 streams ever started during that window. Any advice would be greatly appreciated.
