Here’s quite an old but extensive discussion of a suggestion going for a similar feature. That discussion is also focusing on how to pick a random item depending on where you click it (e.g. from the entire server, from a specific library/collection/show/season/playlist/…).
But as Otto said – in the end it comes down to clicking Shuffle on that particular level.
