You need to try different codecs/containers. Currently, the app cannot decode video in an MKV container, regardless of codec. Try something that is H.264 codec with MP4 container. You also need to ensure the total bitrate is less than 20Mbps, otherwise transcoding will occur, regardless of codec or container (this limitation is removed in the upcoming version).
By and large, the two most popular combinations are H.264/MKV and H.264/MP4. Until the new update is approved by Microsoft, the app only supports the latter (and other, less popular combinations). FYI, this was due to API limitations when the app was first developed, not an oversight or omission from the Plex team.
