I’m wondering if / where the default settings are , to enable remote streaming without constant pauses for buffering? My GF is connecting remotely from across the country but it seems the default settings cause a lot of constant loading?

You need to take your upload speed and your gf download speed. There are some setting to fiddle around.
In OpenPHT go to Preferences -> Change Preferences For Network (globe icon), increase cache size and adjust remote video quality.
Lowering quality might help you but then again your PMS needs to transcode it. What’s your connections speeds?
