Removing old user data from server

how can I remove the old user data from my windows Plex server? my server still has user data from removed users. I would like to remove all user data and start over. can that be done without losing my media metadata? where does Plex store the user data? is it mixed in with the media data or is it in a separate database? thanks I hope someone can help me I’d hate to have to rebuild my server from scratch just to remove all the old user and user info.
