You can’t. Except by manipulating the Plex database directly.

Can I reset all statistics?

You will be needing either the SQLite tools (command line) or you use any other GUI SQLite editor. I use sqlitebrowser.org You must stop Plex server from running before doing any manipulations on the database. (on Windows, ‘Exit’ Plex server using the tray bar icon. Closing the web browser window is not enough!) Make a backup copy of the DB file before you do anything.
