I’m interested too, there’s a show I keep re-watching and up to now every time I just mark it all as “unwatched”
Yep, that’s pretty much it.
You can mark the whole thing unwatched with one strike of the hammer from it’s main show page.
I did GOT in re-runs too - while I was gathering this season. I like rapid-fire-machine-gun-Kelly viewing of GOT. That ‘watch one - wait a week’ thing just doesn’t cut it.

Of course. The secret is to go up to the highest level of the show. I.e. not on the season nor on the episode level. There is a watched/unwatched toggle switch in every client. If your show is partially watched, you may have to flip the switch twice.

Indeed. Mark watched first, then unwatched.
Yeah I figured it might have picked up the next upon restarting. But alas. Have marked all unwatched now. Lucky theres a year and a half before season 8
I watched 6 Seasons in two weeks (10 days maybe) - without even trying hard.
Much better experience this time. I had ripped all the BluRays and burned in the Dragon Chick subs so I didn’t have to go looking for them on this run. Enjoyed it.

It would be difficult to tell when you are actually restarting or you’re just re-watching an episode… maybe it could check if all episodes are “watched”, but even then, all episode in one series? Or all episodes in all series? Pretty tricky, better to just mark all unwatched 
If you already watched a few episodes of this show: you can also toggle ‘watched’ status on a whole season at once.
And in Plex Web you can ‘select’ several items and toggle ‘watched’ for these at once.
So you can get to your desired state pretty quick.
