Is there a way to set the defaults for optimization? For example, I’d like to have it default to 1080p TV and a separate folder, for example.

Not at this time. Since the defaults can’t be preset, you need to select them every time you make a OM job.
I think there is a Feature Request for it in that forum, but you’ll have to look for it.
Just don’t count on it becoming a reality any time soon. As has been stated in another thread I have in this forum, @elan doesn’t think the Feature Requests are representative the wants of most people using Plex. Priority on Feature Requests isn’t, well, a priority. I guess it’s too boring or something…
